Dinner idea…

My best friend Jess and her roommate gave me one of their great dinner creations that is vegetarian friendly, but I ate this even before I was a vegetarian. I don’t even have a name for this dish, suggestions after you read this??

This is a black bean and vegetable dish. For those of you who don’t like black beans, sorry this dish is not for you. For those of you who do like black beans, read on!

Basically I take one can of organic black beans and add vegetables, cheese, and salsa. Sometimes I put it in a whole wheat tortilla or I just eat it plain. Both ways are delicious!

I start by saut√©ing the vegetables. Last night I cooked an onion in a little bit of olive oil until tender. Sometimes I use frozen corn or peppers. Whatever I have on hand, I add in!

I then added 1/4 cup of Morningstar Farms Grillers Recipe Crumbles. After the crumbles were cooked through, I added the entire can of beans (preparation: drain and rinse the beans before adding). This was the first time I used the crumbles in this dish and it added a lot of flavor and extra protein. Definitely give these crumbles a try!

Once the beans were heated through, I added 1/4 cup of fat free cheddar cheese and let it melt in the bean mixture. Add salt and pepper to taste, of course. I then put it in a serving bowl and topped it with salsa!  

YUMMM!!!! This is my favorite go-to dish when I’m lazy. I can whip this up in less than 10 minutes. It also kept me full. This would also be a great lunch idea also.
