Happy St. Patty’s Day! For our last night in Florida, my Aunt cooked us some whole wheat pasta with vegetables, pesto, and tomato sauce. She also put cooked shrimp on the side. It was such a great and easy recipe, and you can create different variations of this pasta dish.
What you need:
- Peeled and de-veined shrimp
- whole wheat pasta (any kind you like)
- fresh vegetables
- jarred tomato sauce
- jarred pesto sauce
Cook the shrimp until they are firm to the touch and slight pink in color.
Prepare the vegetables by cutting them into 1 inch pieces and saute them in olive oil and garlic.You can use any kind of vegetables you like. My aunt used mushrooms, peppers, and onions.
Cook the pasta in boiling water and a pinch of salt. You add salt to the pasta water because this is the only opportunity you have to season the pasta.
Add the pesto and tomato sauce. Start with adding some pesto sauce first, then the tomato sauce. Keep adding each of the sauces until you get the taste you like. Let the sauce simmer so all the flavors come together.
Once the sauce is finished slowly add the pasta to the sauce until it is fully coated in the sauce. Add the shrimp if desired or keep them on the side. You can also use tofu, chicken, or any other protein you like for this dish.
We also had some salad on the side… This dish was awesome! I loved the combination of the pesto and tomato flavors. This was extremely easy to make and didn’t take much time. Definitely try this dish for a large crowd or just for yourself!
