Home for the holidays #2

Good morning everyone, happy hump day!!!! Today’s post is a re-cap of my Mother and I making homemade strudel! For those of you who don’t know strudel is a layered pastry with some sort of filling inside. My grandma used to make it for all of the Jewish holidays and now my Mother has taken over the role! I asked my Mom what I can bring for Rosh Hashana dinner and she said “nothing, bring yourself because we are making strudel!” I was so excited!!!!!
The dough:

  • 2 sticks of butter (room temp)
  • 1 eight ounce cream cheese (room temp)
  • 2 cups of flour
  • 2 tbsp of sugar

Chill the dough for 30 min

Here is my Mom rolling out the dough into a thin layer.

The fillings!Top left: prune, bottom left: apple, bottom right: apricot, top right: cherry

Adding the filling to the pastry dough

Here I am!! I was trying to keep up with my Mom but she does it so fast!
After adding the filling, we folded the dough to create a log and popped the strudel into the oven until golden brown.

My Mom doesn’t have a certain time she bakes the strudel, she just keeps checking it to see when it’s done. That was the way my grandma taught her!

Finished strudel!
I love when I can see the filling oozing out!
After the strudel cools, we wrap them up in foil and label them.

When my Mom is ready to serve the strudel she cuts them up into 1 inch pieces and sprinkles them with powdered sugar.

This is one of my favorite holiday deserts!
For those of you who are Jewish, L’shana Tova!!!!!
Have a great day!!!!
