Stuffed Chickyyy

Hey everyone! Hope you all had a nice weekend. My co-worker was in town with her Mom so I had to bring them to some fantastic Chicago places! We dined at Friends Sushi on Saturday night…

It was delicious!
 Last night I made a new recipe, pesto pasta with goat cheese and spinach stuffed chicken breast. I got this idea from Janetha but put my own twist on it!
 First I split the chicken breast to create a pocket for the stuffing

 I stuffed the chicken breast with the goat cheese and spinach.

I secured the stuffed chicken with tooth picks and threw it in a pan to saute until golden brown on both sides. 

 I put the stuffed chicken into a 400 degree oven for about 15 minutes until it was cooked through.
While the chicken was baking, I boiled 1/2 cup of whole wheat pasta

 I tossed the pasta with some pesto and parmesan cheese

 Here is the finished chicken!

 Oozing with cheesy goodness!
This recipe was very easy to make and tasted delicious! The chicken was moist and very flavorful. You can make this same recipe or create your own variation.

I’m taking my first Barre Bee Fit class tonight after work with my friend Whitney! I’ll let you know how it goes!
