- 1-2 ounces of boneless, skinless chicken breast
- 2 cups of frozen stir fry veggies (you can obvi use fresh)
- 1 tbsp of olive oil
- 2 tbsp of low sodium soy sauce
- 2 tbsp of honey
- 1/3 cup of cornstarch (for dredging)
- 2 egg whites
- 1 garlic clove minced
Heat up a large skillet and sautee the veggies in olive oil until crispy and tender. Set aside. Cut up the chicken into 1 inch pieces. Dip the chicken pieces in the egg whites and lightly dredge the chicken in the corn starch. In the same pan (or a different one) sautee the chicken until golden brown, about 3-4 minutes. Add the vegetables to the chicken, season with salt and pepper. Add the soy sauce and honey and mix together to combine.
Awesome hot chocolate discovery:
Hot chocolate is my winter weakness. I recently purchased a variety pack of coffee’s for my Keurig which included some hot chocolate. Last night (when I was craving chocolate per usual) I decided to try the hot chocolate in my Keurig. I assumed this was going to be a splurge.
Boy was I wrong…
This hot chocolate is only 70 calories!
Better than any of those 100 calorie hot chocolate mixes that always taste like poop anyways. This is legit and not skimping on chocolaty goodness.
