Hi everyone! Hope you all had a fabulous Christmas! I woke up this morning and had brunch with my Dad and sister in the suburbs before I headed back to the city.

I have been eating like it’s going out of style so I got back on track asking for egg whites, turkey sausage (instead of chorizo), and fruit on the side. It was delicious and making a few small changes cut the calories of this omelet in half!
I was watching Aarti Party on the Food Network and saw her make Lebanese Meat stuffed pitas. I was inspired and decided to make them myself with my own version (and a healthier twist).
If you are not familiar with the show Aarti Party, Aarti is the season 6 winner of The Next Food Network Star. She takes everyday dishes and puts an Indian spin on them. Since I’m not a fan of Indian flavors (sorry Aarti), I decided to make these meat pies using Mediterranean ingredients and of course ground turkey instead of ground beef.Recipe:
- 1/2 large white onion, roughly chopped
- 2 cloves garlic, smashed
- 1/2 small bunch fresh parsley
- 1 pound ground lean turkey breast (I love Jennie-O)
- 1 small tomato, diced finely
- 1/2 cup toasted pine nuts
- 1/3 cup panko bread crumbs
- 1/2 cup of reduced fat crumbled feta cheese
- salt & pepper to taste
- 2-6 whole wheat pitas (halved)
Preheat the oven to 400 degrees F.
In a food processor, combine the onions, garlic, and parsley until finely minced. Remove to a large bowl and add in the turkey, tomato, panko bread crumbs pine nuts, and feta. Season with salt & pepper.
Mix with your hands until well combined. Arrange the pita halves on a baking sheet.
Fill each half with about 4 tablespoons of the turkey mixture, flattening it out so the filling is even.
Bake for 30 minutes, turning once halfway through. Pitas should be browned and crispy.

The turkey meat pies turned out awesome! The pita was crispy, the meat was perfectly cooked and tender, and I was able to taste all the veggies and of course the feta!!!!! This recipe would go perfect with a side salad or cut in quarters and served as an appetizer. YUMMERS!!!!!!
