Crunchy Honey Mustard Chicken

I love chicken

I love honey

I’m okay with mustard but I actually love mayo…gross

I saw a Hungry Girl episode where Lisa Lillian makes onion rings using fiber one cereal to coat the rings and I decided to use it to coat CHICKEN!

Crunchy Honey Mustard ChickenIngredients:

  • boneless skinless chicken breast
  • 1/2 cup of fiber one cereal
  • salt and pepper to taste
  • 1 tbsp of Dijon mustard
  • 1 tsp of honey
  • 2 egg whites

Directions:
Cut up the chicken breasts into 2 inch pieces. You can keep the chicken breast whole if you want, I just wanted them to resemble chicken fingers. In a food processor, grind up the cereal until it’s a fine powder like consistency. Season the fiber one coating with salt and pepper. Start with dipping the chicken pieces in the egg whites then lightly coat the chicken with the ground cereal. Place on a baking sheet lined with foil and non stick cooking spray.

Bake the chicken at 375 degrees for 20-25 minutes, flipping halfway through.

Serve with a side of veggiesthe perfect compliment to my healthy dinner
The chicken was delicious, crunchy on the outside, juicy on the inside, and very FILLING. I was stuffed after this meal… it’s the fiber one of course :-)
