Zucchini Pizza Logs

I love trying out new vegetarian dishes, and these zucchini pizza logs are super easy to make and take no time at all. You can customize this recipe to be whatever you want it to be or make it as is. You can get creative with this dish so don’t be afraid to make it your own.
Zucchini Pizza Logs
1 zucchini
1 cup of tomato sauce (any kind you like)
1/2 cup of your favorite cheese
I used goat cheese, I love the creamy texture and the tangy flavor
Cut the zucchini in half lengthwise and scoop out the seeds
top with the tomato sauce and cheese
Bake in a 400 degree oven for 20-25 minutes until the zucchini is tender and the cheese is golden brown and bubbly.
Tip: you may want to add the cheese the last 10 minutes of baking. This will avoid it from burning.
Not only is this dish delicious, it is extremely filling and satisfying
obviously I cleaned my plate
Special thanks to Abby and Christie for sharing this awesome recipe with me!

Have a great day!
