Baked Egg White Frittata

I’m not sure why I’m on a frittata kick, maybe it’s because I’m broke. 
The other night I was bored, so I used the leftover peppers and onions from the baked frittata muffins and made a giant frittata. This time I used egg whites which I actually liked better. I have to admit, this is a great dish to make when you’re on a budget. This is also a great way to use leftovers before they go bad.
Baked Egg White Frittata
1 carton of egg whites
1 pepper (any color), chopped
1/2 large onion chopped
2 tbsp of olive oil
salt and pepper to taste
1 cup of cheddar cheese, divided into 1/2 cup portions
In a medium to large skillet, saute the peppers and onions until soft. While the veggies are cooking, whisk together the entire carton of egg whites and 1/2 cup of cheddar cheese. Stir in the veggies when they are finished cooking. Spray a casserole dish (any size you like) with non stick cooking spray and fill the dish with the entire egg mixture.

Bake in a 400 degree oven for 25 minutes or until the egg mixture puffs and is just set in the center.

Add the remaining 1/2 cup of cheese and broil for 3-5 minutes until the top is crisp and bubbly.
 this will make perfect leftovers :)
