Herb Roasted Salmon & Garden Photos

How gorgeous are these photos?
For except these aren’t photos from my garden, they’re from my friend Cecil’s. As you can tell his garden is pretty sweet! 
I will eventually grow my own vegetables and get some other pretty plants but since I’m new to this whole gardening thing I decided to start with herbs…

Since I had fresh herbs on hand I decided to use them and make herb roasted salmon. There’s nothing better than cooking with fresh herbs. I love the freshness, flavor, and variety. It makes such a difference to any dish.

Herb Roasted Salmon
ingredients:
1 6-oz piece of salmon
1/4 cup of olive oil
juice of 1/2 lemon
1 tsp salt
1 tsp pepper
1 tsp of garlic powder
1 tbsp of chopped rosemary
1 tbsp of chopped parsley
Directions:
In a shallow bowl combine the olive oil with seasonings and herbs. Place the salmon in a medium size baking dish and generously rub the salmon with the olive oil and herb mixture. Optional: allow the salmon to marinate for at least an hour to allow the flavors to absorb. Bake at 400 degrees for 25 minutes until the fish flakes with a fork. Spritz with the juice of 1/2 of lemon.
Serve with a vegetable, preferably a green veggie. As you can see, I had sautéed string beans on the side.
