BBQ Salmon w/ grilled asparagus & sweet potato fries

I know I’ve been posting salmon recipes lately but it’s just so easy to make and I love the color and texture of the fish. I most recently made BBQ Salmon with grilled asparagus.

I brushed the salmon with my favorite BBQ sauce, seasoned it with salt and pepper, then put it on the grill for about 10-15 minutes until the fish was firm.

My favorite part about using the grill is seeing those beautiful grill marks!

Asparagus: I kept it simple and simple used olive oil, salt and pepper. and put it on the grill for about 10 minutes until the asparagus was tender and of course had those grill marks!

To compliment my healthy dish I made a batch of homemade sweet potato fries.

Homemade Sweet Potato Fries
3 medium sized sweet potatoes cut into 1 inch steak fries
1 tsp of salt
1/2 tsp of pepper
1/2 tsp of cinnamon
2 tbsp of brown sugar
Once the sweet potatoes are cut into fries, soak them in cold water for 10-15 minutes (this will remove the starchiness from the potatoes). Remove the fries and pat dry with a towel. Place them on a baking sheet sprayed with non stick cooking spray. FYI: I used NO oil in this recipe and they turned out perfectly crisp.
Bake the fries in a 400 degree oven for 45 minutes or until the fries are crispy and golden brown. Let the fries cool a bit before you sprinkle them with the cinnamon and brown sugar (you don’t want the brown sugar to melt over the fries).
They were delicious, crispy, and sugary sweet.
I highly recommend you make these ASAP!
