This is a easy and comforting recipe. The best part about it, you throw it in the oven and 30 minutes you have a fancy yet healthy dinner!
Thai Ginger Salmon with Roasted Asparagus
ingredients:
- thai ginger marinade (I used whole foods brand)
- 1 6oz piece of farm raised salmon
- 1 tsp of salt
- 1 tsp of pepper
- 1 bunch of organic asparagus
- 1 tbsp of olive oil
Salmon: season with salt and pepper. Coat the salmon liberally with the marinade. Please the salmon in a baking dish sprayed with non stick cooking spray.
Asparagus: cut the tips off the asparagus and rinse well with cold water. Coat with olive oil, salt, and pepper. Place the asparagus evenly on a baking sheet.
Bake at a 350 degree oven for 30 minutes until the asparagus is tender and crispy and the salmon is firm to the touch and a light pink color.
This dish is light, flavorful, and packed with tons of vitamins. I love this dish during the week too. I sometimes let the fish marinate over night int he fridge so I can pop it in the oven when I get home from work.
