Good morning! Happy Hanukkah to all my Jewish readers. My Mom gave me this electronic lucite menorah that glows. I love it because I don’t have to worry about lighting candles!
Sunday night, Texas boy got his culinary on and made me Thai Peanut Stir Fry. He originally wanted to make it with chicken but since I was being a pain in the ass and not eating chicken, he made it with shrimp.
Thai Peanut Stir Fry with Shrimp
This dish is amazingly good. The flavors are very comforting.
ingredients:
- 1 pound of shrimp
- 1 cup of broccoli florets
- 1 cup of snow peas
- 1 red bell pepper
- 1 large carrot
Sauce:
- 2/3 cup PB
- ½ cup soy sauce
- 1/3 cup olive oil
- 1 tsp red pepper flakes
- 1 tsp salt
- 1 tsp chili powder
- 1 tbsp garlic
- ½ cup water
- 1 tbsp of chopped peanuts (reserved)
directions:
Put the veggies in a hot wok or skillet with vegetable oil, garlic, and spices listed below.
While the veggies are cooking mix the peanut butter, soy sauce, salt, olive oil, red pepper flakes, chopped peanuts, chili powder, gralic, and water. You can add more water for consistency.
When the veggies are soft, add the shrimp and the peanut sauce. Make sure the shrimp are fully cooked before serving.
Top the finished stir fry with more the chopped peanuts if you desire.
We also enjoyed this side salad too.
