Split Pea Soup

I’m really on a chili/soup kick these days. Sunday is my day where I take out the crock pot and make something delicious and hearty. My Dad made some awesome split pea soup a couple of weeks ago so I decided to take a stab at it and make my own.

Split Pea Soup {made in the crockpot}

ingredients: 

  • 1 (16-oz) package dried green split peas
  • 1 cup chopped baby carrots
  • 1/2 chopped yellow onion
  • 1 cup chopped celery
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 package of Manischewitz lentil soup mix
  • 1 tsp of salt
  • 1 tsp of pepper

directions:

In a medium skillet sauté the onions, carrots, and celery in 1 tbsp of olive oil, salt, and pepper. Once the vegetables are tender and cooked through transfer to the crock pot. Layer the rest of the ingredients in the slow cooker, chicken broth last. Cover and cook on high 4—5 hours or on low 8—10 hours until peas are very soft (pictured above).

Optional: Puree the soup using a blender or boat motor to give it a smooth consistency.

Ok, so the color of the soup isn’t so fabulous and it kind of looks like baby food. Trust me, it’s delicious!

Filling, flavorful, and low calorie.

I put it in tupperware containers and having it for lunch all week… if it even lasts that long :)
