Good morning! How was the weekend? My weekend was so much fun, I celebrated my best friend Jess and her fiance Drew’s engagement Saturday night. We ate, drank, and danced the night away. I am so happy for them and can’t wait to continue the celebration!
As part of my healthy eating and lifestyle, I made panko crusted whitefish. I got the idea from my Mom who eats fish for dinner at least twice a week. I went to the fish counter at whole foods and got a fresh piece of whitefish. The guy at the fish counter told me whitefish is very lean and cooks up quickly. He did not recommend grilling it since it’s such as delicate fish.
Panko Crusted Whitefish
Ingredients:
- One 10oz piece of whitefish
- 1/4 cup of EVOO
- 1 tsp of sea salt
- 1 tbsp of everyday seasoning (I used Trader Joe’s brand)
- 2 tbsp of panko breadcrumbs
Directions:
Place the fish on a baking sheet sprayed with non stick cooking spray. Coat with the olive oil, salt, and seasoning making sure the entire piece of fish is evenly coated. Top with the panko bread crumbs. Bake in a 375 degree oven for 10 minutes then turn to broil the last 4 minutes of cooking.
I also made this recipe with tilapia but the whitefish turned out better.
