Happy Halloween! This post has nothing to do with Halloween but since it’s been freezing here in Chicago these days I decided to post this comforting recipe.
I am not a huge pasta person but I had an itch to make some. I figured why not make a meaty sauce to go with it, besides I deserve it.
I’m a little picky when it comes to red meat these days so I made sure to get grass fed ground beef, 90% lean of course.
- 1lb grass fed 90% lean ground beef
- 1 small onion chopped
- 1-28 oz can crushed tomatoes
- 1/4 cup red wine
- 1 bay leaf
- salt and pepper
- 2 sprigs of fresh thyme
In a deep saute pan, saute the onion in 2 tbsp of olive oil until soft. Add the beef, season with salt and pepper and saute until browned. Add the wine and cook until it reduces down (3-5 minutes). Add tomatoes, bay leaf, and thyme. Simmer on low for 45 minutes to 1 hour, stirring occasionally. Make sure to remove the bay leaf before you serve.
I served it with whole wheat rigatoni noodles. I like rigatoni the best because the sauce gets stuck inside of the noodles so every bit of pasta is coated in sauce.
