I love my slow cooker, it never fails me! I wanted to make taco night for the bears game but didn’t want to deal with the stove or grill. With a little planning ahead, I made a stress free meal for game night. I think this is the best taco night I’ve ever made!
I don’t eat chicken very often but when made in the slow cooker it falls apart after simmering in the slow cooker for hours. The chicken came out juicy, tender, and had the perfect balance of flavors.
Pulled Chicken Tacos
- 1 pound boneless, skinless chicken breasts (about 2)
- 1 tbsp of minced garlic
- 1 16 oz jar of salsa
- 1 tablespoon chili powder
- Coarse salt and ground pepper
In slow cooker, combine chicken, garlic, salsa, chili powder, 1 teaspoon salt, and teaspoon pepper. Cover; cook on high, 4 hours (or on low, 8 hours).
Transfer chicken to a serving bowl, and shred, using two forks. Place chicken back in the slow cooker to absorb the sauce. Serve with corn tortillas, or if you want to be really good in lettuce cups.
Served with homemade guac, shredded cheese, sauteed peppers & onions, and sour cream.
