Super Duper Bowl

Good morning! I feel like a walking carb face after eating all of that yummy food at the superbowl last night. Everyone made amazing dishes, I can’t wait to post the recipes and share them with you!

My friend Colleen took mini bags of fritos, crushed them up, and cut an opening at the side of the bag. Then had us fill them with homemade vegetarian chili, cheese, lettuce, and sour cream.

Tomato, Mozzarella, & Basil Skewers

Good morning, aaaaaand it’s Monday again. I hope everyone had a great weekend. I am exhausted from the Katy Perry concert last night. It was awesome!!!!!

Saturday night I went to a birthday BBQ for my friend and made these tomato, mozzarella, and basil skewers. The basil in my garden is growing like CRAZY so I thought it would be fun to use it in a dish to share with my friends.

These skewers are easy to make and you can even prepare them the night before you plan on serving them. I used all of my ingredients from Trader Joe’s except for the basil. 
Tomato, Mozzarella, and Basil Skewers
ingredients:
1 oz of cherry tomatoes
1 container of marinated mozzarella balls
5-6 fresh basil leaves
10-12 wooden skewers
salt and pepper to taste
directions:
Wash the tomatoes and dry well. Thread the tomatoes and mozzarella onto the skewer in whatever order you like. As you can see below, I alternated the tomatoes and mozzarella so the red and white colors alternate. 
Once you have finished threading the tomato and mozzarella on all of the skewers drizzle the skewers with the marinate from the mozzarella. Make sure to whisk the marinate before so all of the flavors are incorporated. Season with salt and pepper to taste. Last, top the skewers with fresh basil. 
I cut the basil leaves into ribbons for a fancy look. Stack the basil leaves, roll them tightly, then cut across the rolled leaves with a sharp knife producing ribbons.

This would make the perfect appetizer or side dish for any party or BBQ. This is quick, easy, and no cooking required.

No Cook Hummus Dip

Good morning! It was impossible for me to get out of bed this morning, I could sleep all day when it rains.

My friend Jessica made this hummus dip for Valentines Day. I liked it so much that I made it last weekend for my friends Bachelorette Party. It’s super easy to make and you don’t even have to cook anything. The presentation was all me :)

No Cook Hummus Dip


Ingredients:
(from Trader Joe’s, of course)
1 large container of Trader Joe’s Hummus
1 container of reduced fat feta cheese crumbles
1 cucumber peeled & sliced into rounds
1 ripe tomato sliced
1/2 red onion chopped

Directions:
Spread the hummus onto a serving plate or baking dish
Top with the entire container of crumbled feta cheese
Layer the cucumbers, tomatoes, and onion however you like over the hummus and feta.
*you can also chop the veggies and sprinkle them over the dip. 

I arranged the veggies based on the shape of my baking dish.


Voilà!

If you choose to make this dip, it’s time to get creative in the kitchen. You can easily wow your guests with a beautiful presentation. No one will ever know it only took you 10 minutes to prepare.

I never understood football nor do I really care to watch, but I love the Super bowl!
