Grilled Shrimp Salad

I’ve been abusing my grill.
DSCN2869And I just can’t help myself. I love going to the grocery store and finding new/different things I can sizzle on the grill. I got to a point where I thought I could grill anything, but that’s definitely not the case. I’ve been on a grilled salmon kick so I decided to go out of my comfort zone and grill some shrimp. I stopped by Plum Market yesterday in Old Town, which JUST opened. Obviously when a new grocery store opens I have to shop there immediately. Anyways, they had pre made shrimp skewers at the fish counter, so I got one with a garlic marinade and the other with a blackened spice rub. YUM!

During the week I like to use as many short cuts as possible to save me time in the kitchen. Taking advantage of pre made items always helps which is why I also stopped by the salad bar and got some cooked quinoa. When I got home all I needed to do was throw the shrimp and veggies on the grill and assemble the salad. This took me no longer than 20 minutes to make.

Grilled Shrimp Salad with Quinoa

for the salad:

  • 4 cups arugula
  • 1 cup sliced pepeprs
  • 1/2 cup sliced onions
  • 1 cup cooked quinoa
  • 10 shrimp, threaded onto skewers (5 shrimp per skewer)

for the dressing: 

  • 1 tablespoon honey
  • 1 tablespoon digon mustard
  • juice of 1 lemon, divided
  • 2 tablespoons olive oil
  • salt & pepper to taste

Preheat grill to high heat, I use a gas grill but a grill pan works just as well. Coat grill rack with cooking spray. Grill shrimp 2 minutes on each side or until they are light pink in color. Remove shrimp from grill, set aside.

Coat peppers and onions with 1 tbsp olive oil, salt, & pepper. Place in a grill basket and grill until tender and lightly brown, about 8-10 minutes. If you don’t own a grill basket you can wrap the veggies in a foil pack and place on the grill.

Assemble the salad in layers starting with the arugula, then the quinoa, peppers & onions, and the shrimp last. You can remove the shrimp from the skewers if you would like, but I think it looks prettier to keep them on it. Optional: garnish with fresh chopped parsley.

My Decision

I’ve decided to go on a diet. I know I’ve said that I don’t believe in diets and I still don’t but it’s just time! Over the past few months I’ve been eating as if calories don’t exist. I used to be able to do that but now that I’m getting older I can’t be a human garbage disposal anymore. My clothes don’t fit me and it’s the worst feeling in the world. I constantly feel insecure about my body so I’ve been sucking in my stomach and wearing heels to elongate my legs. This has got to stop before it gets worse.

I’ve decided to do a version of the Paleo diet by giving up carbs and dairy. I’ve heard pros and cons of doing this but I really don’t care. I need to lose weight and I need to lose it now. I’ll figure out the rest when I’m ready. I also need something to give me that extra push so I can fit back into my clothes again. Trying to eat healthy and working out just isn’t cutting it for me.

Yesterday was the first day on my diet and it was not fun. It’s not easy either. All I want is a breakfast sandwich and hopefully within the next couple of weeks I won’t crave such a thing. Below is what I ate yesterday.

Breakfast:

Lunch:

  • Turkey lettuce wraps with mustard

Snack:

  • 12 almonds

Dinner:

  • BBQ salmon with asparagus

It’s pretty miserable but I feel better already and that’s what matters. I’ll make sure to update my progress and let you know how I’m feeling. Until then, wish me luck!

A low-sugar, high-fiber breakfast

If you shop the Meijer cereal aisle, you may have noticed some changes recently. The Meijer brand cereal line has a fresh new look and is growing to offer customers more choices to start their day.   •        Multigrain Toasted Oats – This O-shaped cereal is made with five whole grains and lightly sweetened. I can see myself using this cereal instead of rice krispies in this recipe.
  •        Blueberry Muffin Squares – These taste like cinnamon toast crunch but BLUEBERRY! It’s the perfect sweet treat with only 130 calories per serving. The best part, it has whole grains and 12 vitamins and minerals!

Additionally, Meijer will be running a 50 percent off sale on Meijer brand cereal April 18-28. 4) Grab a buddy. It’s a fact that you will achieve greater success
when you have the support of those closest to you. So get your friends
together to support each other in being healthier in 2013.

5) Create healthier alternatives to your favorite fried foods. Opt for
cooking methods that use little or no fat such as steaming, grilling,
baking, popping, broiling or roasting. You can still make these items
taste great with the right seasoning! Have a weakness for fried
chicken? Instead take skinless chicken breast cutlets, cover them in
egg whites and a crushed up cereal like cornflakes, and bake. Same
great taste and more than half the calories and fat.
