Arugula, Apple & Avocado Salad

aaa salad I like to call it triple A salad, it’s more fun that way. This was created on a whim when I was making dinner and needed something green. I turned to google and searched for arugula salad and found this recipe. I didin’t follow the recipe exactly, I just threw the ingredients in a bowl and hoped for the best. I’m not sure if it’s because I’m lazy or confident but I kind of find it fun. Does anyone else do that?

Arugula, Apple, & Avocado Salad

makes 2 generous servings

for the dressing: 
1 tablespoon honey mustard
juice of 1 lemon, divided
2 tablespoons olive oil

for the salad:
1 apple, chopped
1 avocado, chopped
5 oz. arugula
3 tablespoons sunflower seeds

In a small bowl, whisk together honey mustard, lemon juice, olive oil. Chop apples and squeeze a small amount of lemon juice on top and toss to prevent discoloration. In a large bowl, add the arugula, avocado, apples, sunflower seeds, and pour dressing on top. Season with salt & pepper.

DSCN2862 This light, summer salad is simple to make and uses ingredients that your probably already have on hand. It’s sweet, spicy, and crunchy which makes this salad a new favorite of mine. I also felt really cool making my own dressing- which I never really do!

 

Shortcut Chopped Salad

Leave it to the Whole Foods salad bar to help me make an awesome chopped salad.

DSCN2793 The reason why I call this a shortcut chopped salad is because I didn’t have the time or the energy to buy all of the vegetables individually and do the peeling & chopping myself. I went to the Whole Foods salad bar and filled up on the toppings I wanted for my salad… broccoli, peas, corn, feta, peppers, onions, edemame, and shredded carrots.

Lettuce is the only thing I like to chop myself. There is something about fresh romaine hearts that adds an entire new level to a salad. Getting them from the salad bar grosses me out for some reason.

I also got a roticerie chicken and an avocado.

DSCN2790 The rest was a piece of cake! I chopped up the chicken into bite size pieces and same with the avocado. From there, I put all of the veggies and chicken into my salad bowl and served it with a couple of dressings on the side. My two favorite dressings are Briana’s Saucy Ginger Mandarin and Trader Joe’s Light Champagne Vinaigrette.

This makes for awesome leftovers just made sure you put the dressing on the side so the salad doesn’t get soggy.

Thai Peanut Stir Fry with Shrimp

Good morning! Happy Hanukkah to all my Jewish readers. My Mom gave me this electronic lucite menorah that glows. I love it because I don’t have to worry about lighting candles!

Sunday night, Texas boy got his culinary on and made me Thai Peanut Stir Fry. He originally wanted to make it with chicken but since I was being a pain in the ass and not eating chicken, he made it with shrimp.

Thai Peanut Stir Fry with Shrimp

This dish is amazingly good. The flavors are very comforting.

 ingredients:

  • 1 pound of shrimp
  • 1 cup of broccoli florets
  • 1 cup of snow peas
  • 1 red bell pepper
  • 1 large carrot

Sauce:

  • 2/3 cup PB
  • ½ cup soy sauce
  • 1/3 cup olive oil
  • 1 tsp red pepper flakes
  • 1 tsp salt
  • 1 tsp chili powder
  • 1 tbsp garlic
  • ½ cup water
  • 1 tbsp of chopped peanuts (reserved)

 directions:

Put the veggies in a hot wok or skillet with vegetable oil, garlic, and spices listed below.

While the veggies are cooking mix the peanut butter, soy sauce, salt, olive oil, red pepper flakes, chopped peanuts, chili powder, gralic, and water. You can add more water for consistency.

When the veggies are soft, add the shrimp and the peanut sauce. Make sure the shrimp are fully cooked before serving.

Top the finished stir fry with more the chopped peanuts if you desire.

A day of salads

Good morning! How amazing is this warm weather?! I’m loving it! Yesterday was my day of salads…

Lunch:
Taco salad for Daddy and I I worked for my Dad yesterday, I love surprising him with lunch. It makes him so happy! Taco Salad:romaine lettuceavocadoreduced fat mexian cheeserotisserie chickencornbeans
Dressing:mix 2 tbsp of fat free sour cream with 4 tbsp of salsa. A GREAT creamy dressing!

Dinner:
Whole foods salad I love the salad bar at whole foods. I make sure to load up my salad with tons of veggies!Mmmmmmm

Get a body like Lady Gaga: Thighs
must be nice!
Here are my favorite thigh exercises that will have your thighs burning for days!

 I have no idea what this move is called so I’m going to name it the “high heels”Go on your HIGHEST pair of heels (like 6 inchers) then sink down until your thighs catch.  
Practice holding this move while squeezing your inner thighs together, make sure your hips are tucked under.
hold for 30-60 seconds Do this at home using a bar stool.
*BBF TIP: the higher the heels the thinner the thighs


Thigh dancing:
 Come onto your knees, with your heels lined up with your seat. Lift your seat off your heels and begin to tuck your hips. Do this about 30 times. 
Have fun with this move and also tuck side to side with your hands in the air and wave them like you just don’t care!
Inner thigh workout:

  • Lie on your back with knees bent, feet on the floor.
  • Lift your right leg so both knees are lined up together.
  • Lift yourself off the ground so your weight is on your shoulders.
  • Begin to lift and lower your seat about 1 inch.

Do this 30 times on each leg. feel the burn!
