Kale and Spinach Bites: These warm, cheesy, nutrient packed bites make for a satisfying snack. Serve them as apps when you have guests over or snack on them as a savory treat. 140 calories for 4 bites. Can I say anymore?

Cookie and Cocoa Swirl: I am obsessed with TJ’s cookie butter, I put it on everything. When I saw cookie butter AND hazelnut spread in ONE jar there was no question it wasn’t coming home with me. This is pure happiness in a jar. Oh, it’s 90 calories per tbsp which is less than peanut butter. This is a no brainer.

Vanilla Ice Cream Bon Bons: These are just pure heaven. Side note: when I think of bon bons I think of Peggy Bundy. The best thing about them is that they are 60 CALORIES PER PIECE! OMG… I sometimes don’t believe it myself. You’re welcome.

Green Tea Mochi: They are exactly the same as the mochi you get at Japanese restaurants for except you can eat them on your couch. With 100 cals per mochi, they make for a great after dinner desert.

Pumpkin Butter: I love to spread it on toast, add it to my oatmeal, or spread it on crackers.

Getting Back on Track

So it’s a new year, new beginnings, new goals. After stuffing my face during vacation, I am completely aware that I need to get back on track. I’m so sick of eating out- so, I’ve been doing a lot of cooking for myself and J and I already feel so much better! I also like to know whats in my food and how it’s made. Even if I tell the waitress at a restaurant to cook my omelet in pam who knows if that actually happens! Below I put together some meal ideas for breakfast, lunch, dinner, and snacks that are easy to make and perfect for during the work week.

Breakfast:

  • Overnight Oats
  • 1 whole grain cinnamon rasin english muffin with 1 tbsp of jam
  • 1 packet of instant oatmeal (I like to keep a box at my desk)
  • 2 whole grain kashi waffles with 1 tbsp of jam/spray butter/light syrup

Lunch:

This is the hardest meal for me, I have no clue why. I am so indecisive about what I want that it’s always a problem. Although I mention my restaurant go-to’s I’ve found that I’ve maintained my weight by bringing my own lunch.  

  • Turkey sandwich in a wrap/sandwich thin/light whole grain bread. Avoid cheese and mayo and use mustard instead. I like to bring my own and purchase turkey from the market. If I’m eating out I make sure to eat my sandwich open face- always! 
  • Soup– I love picking up vegetable from Au Bon Pan. They have 12 different kinds of soups and you can see the calorie content for all of them. I am not a fan of canned soup, I find it to be disgusting.
  • Chili– I just made a batch of Taco Chicken Chili. I stored the leftovers in portioned tupperware containers and bring it for lunch. Watch out for toppings such as cheese and sour cream, those add up!
  • Salad– I find salad to be the biggest pain the in butt to make at home. I love the Whole Foods salad bar. I create monster salads with tons of veggies. I’ve been enjoying Trader Joe’s kale salad, I feel so healthy when I eat it for lunch.I also like salads from Protein Bar too, the southwest salad is my favorite. Always order dressing on the side and stay away from creamy dressings which are a ton of calories.

Dinner:

  • Salad– see above
  • FishSalmon, Whitefish, Tilapia are my favorite fish to cook during the week.
  • Sushi– J and I order in sushi at least once a week. Stick with the rolls without tempura crunch, cream cheese, mayo, or sauce. Those all add extra calories. I also love go mai (boiled spinach with peanut sauce).

Snacks:

  • Mojo bars or Kind bars
  • Clementines (in season!)
  • Apple with 1 tbsp of almond butter
  • Pop Chips

Tips:

  • Always measure your portions. If you don’t have measuring tools handy, make your best guess. Items like peanut butter add up.
  • Do NOT starve yourself. This will lead to a binge later which will just upset you even more.
  • Wear a pair of pants that are a little snug on you- this will be a constant reminder to eat healthy.
  • To stop yourself from late night eating: paint your nails. You can’t stick your hand in a bag of chips with wet nails!
  • I have found that drinking green juice such as BluePrint’s Green Juice (kale, apple, ginger, romaine, spinach, cucumber, celery, parsley, and lemon) reduces my cravings. It’s sold at Whole Foods now!

Trader Joe’s Gift Ideas

I was at Trader Joe’s yesterday (I haven’t done a good shop there in over two weeks), and saw some adorable items that would make great gifts! I never like to go to anyone’s house empty handed and these items are very affordable and something people wouldn’t usually buy for themselves. I just couldn’t help myself and bought this variety pack of fruit preserves. They are too cute to handle!

Chocolate Chip & Toffee Blondie Bars

I apologize in advanced for posting this unhealthy recipe.

But these blondies are soooooo easy to make and they were a hit when I made them for my baby cousin’s baby shower a couple of weeks ago. Best thing of all, they are from a box mix- I just added some extra love with toffee bits. The chocolate chips came with the blondie mix.

I always like to keep box mixes on hand, you never know when you’ll need it… and who likes store bought deserts? Not me! Even though these blondies aren’t made from scratch, I still took the effort to make and assemble them. To me, that means way more then going to the store and picking up some brownies no matter how good they are.

Chocolate Chip & Toffee Blondie Bars

Made from Trader Joe’s Blondie Bar Baking Mix 

ingredients: 

  • 1 box Trader Joe’s Blondie Bar Baking Mix
  • 1 stick of butter, unsalted
  • 1 egg
  • 1/2 cup Heath toffee bits (optional)

directions: 

Melt the butter in the microwave for 1-2 minutes until melted. Beat the egg and add to the blondie mix with the melted butter. Mix well. Add the toffee bits. Spray a 9×13 brownie pan with non stick cooking spray. Press the batter evenly into the pan, bake at 350 degrees for 18-22 minutes. Make sure to keep an eye on them since all ovens are different.

I like mine to be a little under baked so they are gooey on the inside and chewy on the outside. YUM!

 I hit up Trader Joe’s last weekend to get my weekday essentials. It makes me so happy when I see their fall items on the shelves such as apple cider, pumpkin soup, and pumpkin flavored snacks.

I forgot to mention in yesterday’s post how I hit up Trader Joe’s this past weekend and stocked up on some awesome treats.

Fantastic in my morning coffee

I didn’t buy this at TJ’s… but I started taking biotin a month ago and I wanted to share how much it’s helped my skin! I haven’t been breaking out nearly as much as I used to. I’m not sure if it’s because I’ve cut out dairy from my diet, Kate Somerville products or the biotin, but my skin has cleared up dramatically.

For all you ladies & gents to suffer with adult acne (especially those painful underground ones) I highly recommend biotin. Of course, consult your doctor before taking biotin or any other vitamin you’re unsure about.

Fatass Friday

I guess I should tell you what I’ve been up to the past few days.

I’ve been dog sitting my parent’s chocolate lab Chloe. I actually grew up with her. We got her as a puppy when I was 14 and we’ve been BFF ever since. My siblings think Chloe likes them the best, but we all know I’m her favorite.

I’ve been spoiling her rotten with a day at the spa (aka Petco), long walks, and giving her all the cookies she wants, although last time she stayed with me Jan told me she got fatter. I just love to spoil my Chloe!

Then it was time to whip out the vanilla ice cream = dangerous.

This is a very easy desert to have on hand. All you need to do is pop it in the microwave for 45 seconds and you have a warm chocolate molten cake. Texas boy and I shared one last week and it was amazingly good!

September Trader Joe’s Finds

Good morning, how are you all on this rainy day? Since I am participating in my company’s healthy living challenge, I decided to take one for the team and walk to work this morning in the pouring rain.

I was ready and prepared sporting my rain boots, rain coat, and umbrella. I got into the office with my head held high and dry…well kind of. My team better love me!

Over the weekend I stopped by my neighborhood Trader Joe’s and picked up these awesome items.
140 calories for 18 rings.
I love how thick and crunchy these grahams are. Perfect for dunking in some fat free cool whip!
120 calories for 2.5 grahams.
I made a batch of this last night and mixed it with some chili. It’s a great noodle substitute with TONS of fiber.

I was all out of this, I love how convenient this crushed garlic is. I hate doing it myself.
Gala apples!
As I was walking home from the store, a homeless lady came up to me and asked me for money. I told her that I had none but I had this bag of apples and offered her one. She got very excited, took a bite, and said how delicious it was. Awwwwwww!
I can’t wait to use this as a marinade.
Totally dissolves the smell of onions, garlic, fish, etc.
I love this lemony fresh soap!
