I love my sequin cardigan that I bought from Edith Hart last month. I paired it with a simple button down and leather leggings. What could be better than sequins and leather?! I love how the leggings are lined on the inside, they do a good job of keeping me warm.

My Mom and I have matching Mara Hoffman coats, she has it in grey. We call it the “bathrobe” coat because it kind of looks like a bathrobe when you tie the belt in the front. This is hands down my favorite winter coat. It’s so cozy and warm, no wonder it resembles a bathrobe!

Getting Back on Track

So it’s a new year, new beginnings, new goals. After stuffing my face during vacation, I am completely aware that I need to get back on track. I’m so sick of eating out- so, I’ve been doing a lot of cooking for myself and J and I already feel so much better! I also like to know whats in my food and how it’s made. Even if I tell the waitress at a restaurant to cook my omelet in pam who knows if that actually happens! Below I put together some meal ideas for breakfast, lunch, dinner, and snacks that are easy to make and perfect for during the work week.

Breakfast:

  • Overnight Oats
  • 1 whole grain cinnamon rasin english muffin with 1 tbsp of jam
  • 1 packet of instant oatmeal (I like to keep a box at my desk)
  • 2 whole grain kashi waffles with 1 tbsp of jam/spray butter/light syrup

Lunch:

This is the hardest meal for me, I have no clue why. I am so indecisive about what I want that it’s always a problem. Although I mention my restaurant go-to’s I’ve found that I’ve maintained my weight by bringing my own lunch.  

  • Turkey sandwich in a wrap/sandwich thin/light whole grain bread. Avoid cheese and mayo and use mustard instead. I like to bring my own and purchase turkey from the market. If I’m eating out I make sure to eat my sandwich open face- always! 
  • Soup– I love picking up vegetable from Au Bon Pan. They have 12 different kinds of soups and you can see the calorie content for all of them. I am not a fan of canned soup, I find it to be disgusting.
  • Chili– I just made a batch of Taco Chicken Chili. I stored the leftovers in portioned tupperware containers and bring it for lunch. Watch out for toppings such as cheese and sour cream, those add up!
  • Salad– I find salad to be the biggest pain the in butt to make at home. I love the Whole Foods salad bar. I create monster salads with tons of veggies. I’ve been enjoying Trader Joe’s kale salad, I feel so healthy when I eat it for lunch.I also like salads from Protein Bar too, the southwest salad is my favorite. Always order dressing on the side and stay away from creamy dressings which are a ton of calories.

Dinner:

  • Salad– see above
  • FishSalmon, Whitefish, Tilapia are my favorite fish to cook during the week.
  • Sushi– J and I order in sushi at least once a week. Stick with the rolls without tempura crunch, cream cheese, mayo, or sauce. Those all add extra calories. I also love go mai (boiled spinach with peanut sauce).

Snacks:

  • Mojo bars or Kind bars
  • Clementines (in season!)
  • Apple with 1 tbsp of almond butter
  • Pop Chips

Tips:

  • Always measure your portions. If you don’t have measuring tools handy, make your best guess. Items like peanut butter add up.
  • Do NOT starve yourself. This will lead to a binge later which will just upset you even more.
  • Wear a pair of pants that are a little snug on you- this will be a constant reminder to eat healthy.
  • To stop yourself from late night eating: paint your nails. You can’t stick your hand in a bag of chips with wet nails!
  • I have found that drinking green juice such as BluePrint’s Green Juice (kale, apple, ginger, romaine, spinach, cucumber, celery, parsley, and lemon) reduces my cravings. It’s sold at Whole Foods now!

So lets backtrack 4 hours ago when I walked home from work on this fine afternoon. I took a look out the window of my office to determine whether I should take a cab or brave the snow. To be honest, I was kind of scared! I decided to walk home, the snow was so deep that I would get home faster if I walked.

Thank goodness for my hunter boots!

Luckily I dug into my gym bag and found my umbrella. I opened it up and it blocked the icy, cold, wind from my face. I didn’t even care if I looked like the biggest dork, it saved me!

Did I mention my umbrella is multi colored polka dot?

I realized that walking through snow is like walking through sand, it’s hard and makes a great little workout. You have to put more energy and force into walking through the sticky snow. By the time I got home I was sweaty! If you really want to get an extra bonus, squeeze your seat muscles as you stride through the snow. This will seriously burn calories!

Snowy Friday

Happy Friday everyone! I decided to spoil myself and take a taxi to work this morning since this is what I faced on my walk home from work yesterday.

Bottle and Bottega

Hi all! Hope everyone is having a great week. Last night I went to Bottles and Bottega in Lincoln Park for a fun winter break activity with my girlfriends instead of  the usual drinks out, dinner out, etc.

Bottles and Bottega is is brilliant concept! This is where you create art while enjoying wine and apps. This three hour class starts with a mini happy hour where you have a chance to open your bottles, bring in some food and mingle with the other participants. Then the instructor gives you a few minutes of technique and you get right down to the painting.

At the end of the session, we walked out with some art, some lady-bonding and a solid buzz.

This is definitely an out of the box idea worth considering for your next get together. They do bachelorette parties, showers, office parties, birthdays, whatever!

Now I need to decide what to do with my painting. Should I put it in my kitchen or my entry way?

Must Have Winter Accessories

Winter is here and the fun has just begun with high winds and freezing temperatures. It so hard to stay cute and stylish while staying bundled and warm in the cold. Here are my winter accessories I rely on to help me stay warm and chic.

1. Add nylon puffer coat: I love the belt and the hood is a MUST!

2. Adrienne Landau Fur Vest {seen on Kourtney Kardashian}: OK, spending $400 plus on a fur vest is ridic but there are so many affordable fur vests out there (faux and real) that add the perfect compliment to any outfit.

3. Ugg Earmuffs: I got these as a gift a few years ago and I can’t live without them. They are so wam and my headphones fit perfectly underneath them so I can jam out on my walk to work.

4. HotHands: I throw these in my purse and jacket pockets. They save me from the cold wherever I am!

5. American Apparel Over the Knee Socks: great to wear with leggings and dresses. Adorable!

6. American Apparel Leg Warmers: these are the best leg warmers ever made. They make such a different when I wear them under my boots. I work out in them too… gosh I love the 80’s.

7. Touchscreen friendly gloves: if you own a touch screen phone you must get a pair. Amazon has a variety of affordable styles.

8. Infinity Scarf: Cozy and warm! Lori’s has adorable ones for under $60.

Eat like a fatty but not be one…

It’s winter and I think everyone craves comfort food. I came home from a long day at work and a tough workout at Barre Bee Fit and wanted a big bowl of pasta!

This actually wasn’t a big bowl of pasta It was a big bowl of broccoli and some pasta.

how on earth did I think of that?

Well…I only allow myself to eat 1/2 cup of pasta per serving. I knew that wouldn’t be enough to fill me up so I added broccoli… something vibrant and green to give me some nutrients while I stuff my face.

And the colors remind me of spring :)

Laur’s Big Fat Bowl of Creamy, Cheesy, Pasta and some green stuff too

Ingredients:

  • 1/2 cup whole wheat penne pasta (or whatever pasta you like)
  • A ton of frozen broccoli florets- idk how much I used, but I added a lot
  • 1 wedge of laughing cow light swiss cheese
  • 1 tbsp of fat free sour cream
  • 2 tsp of grated Parmesan cheese
  • 1 tsp of salt
  • dash of pepper

Directions:In a large sauce pan boil some water w/ 1 tsp of salt. When the water gets to a boil add the pasta and let cook for about 8 minutes or until half way cooked though. Add the broccoli to the same water as the pasta. Once the pasta and brocoli are tender, rinse and put in a shallow bowl. Add the laughing cow cheese and sour cream to the hot pasta & broccoli. Stir well until the cheese melts. Add the parmesan cheese and pepper.

TIP: Prepare the cheese wedge and sour cream ahead of time by combining them together to make a creamy sauce. This will make the whole mixing process easier.

I can’t take credit for ALL of this recipe… I got the creamy sauce idea from Hungry Girl’s Lisa Lillian.
I know it sounds absolutely disgusting but you should really try it. The sauce tastes like a REAL alfredo sauce and it’s delish. NO JOKE! It’s cheesy, creamy, and super easy, I can’t wait to make this recipe again!

Veggie Soup Concoction

I HATE winter. 

It is such an inconvenience aka my family is forbidding me from driving home in this gorgeous Chicago icy disaster.

RUDE.

When is Summer? Since it’s so darn nasty outside my parents decided to be a cute little tag team and make this delicious veggie soup concoction.

Jan and Marc’s Veggie Soup Concoction

  • 2 bone- in skinless chicken breasts
  • 1/2 onion chopped
  • 2 carrots evenly sliced
  • 2 small potatoes diced
  • 2 cans of tomato sauce
  • 2 cups of water
  • 1 15-oz can of chicken broth
  • 1 can of red kidney beans
  • 1 cup of pasta (any kind you like)
  • 1 package of manischewitz soup mix
  • 1/4 cup of olive oil (yes, it’s a lot of oil but this is a big recipe!)

In a large pot, take 1/4 cup of olive oil and sear the chicken breast until golden brown on both sides- season well with salt and pepper. Next, add the onion, celery, carrots, and potatoes to the pot and let them saute with the chicken for 10 minutes.

Add the chicken stock, tomato sauce, water, beans, soup mix, and pasta. Bring to a boil and then reduce. Cover with a lid and simmer for 1-2 hours. Remove the chicken breasts from the bone and shred into the soup.

This recipe also works well in the slow cooker. Just throw all ingredients into the slow cooker except for the pasta and turn on low for 6-8 hours or high for 4-6 hours. Don’t forget to remove the chicken breast from the bone and add the pasta.
