Danks Giving Dinner

Good morning! I apologize for being a terrible blogger, there have been some technical difficulties with my site. I am so excited to finally post!

My friends and I got together last weekend and made our own thanksgiving dinner aka Danks Giving. Everyone contributed to the feast and made a variety of dishes that were fantastic! Even my friends who claim they can’t cook put in the extra effort to make something special.

After this feast I couldn’t even breathe. Monday I was back at it drinking my GGS every morning. I have my cousins wedding this weekend in Connecticut and I’m wearing a skin tight dress. I am doing barre burn three days in a row this week!

It’s peanut butter jelly time!

Good morning and Happy Valentines Day! My high school friends and I got together last night for a lingerie exchange party… so fun! All you ladies should definitely get together and do this with your girlfriends!

It’s peanut butter jelly time!  My friend Stephanie and I love the peanut butter and jelly bars from Goddess and the Grocer so I decided to make my own!
Peanut Butter and Jelly Barsusing 3 ingredients
Ingredients:

  • 1 pouch of store bought peanut butter cookie mix (yes, I cheated)
  • 1 jar of strawberry jam
  • 2/3 cup chopped peanuts

Prepare cookie mix according to directions Spread 2/3 of the dough in a prepared cake pan
*make sure you spray the pan with non stick cooking spray
spread the jam evenly over the dough
TIP: mix the jam up before adding to the dough so it will spread evently
drop small globs of the remaining peanut butter dough over the jam don’t worry if the jam isn’t covered
Bake for 40 minutes at 375 degrees, sprinkling the chopped peanuts over the bars half way through cooking.  You can use any kind of jam you like, I prefer strawberry jam (not jelly) because I like the texture. make sure you let them cool completely before cutting into bars yummy, gooey, peanut butter and jelly happiness!
Make these for your Valentines Day sweetie!
I personally think Valentines Day is the greatest excuse to eat all the chocolate I want.

Super Bowl Recipe Post

As promised, here are the recipes from last night’s super bowl party! Enjoy :-)
 
Buffalo Dip
Ingredients:
Rotisserie chicken
Few stalks of celery finely chopped
2 bricks of cream cheese
1 cup Frank’s Hot Wing Sauce
1 cup Ranch dressing
Shredded cheddar cheese


Directions:
-Preheat over to 350 degrees
-Buy a rotisserie chicken and shred up the white meat
-While still warm, mix the shredded chicken with 2 bricks of cream cheese and a few stalks of finely chopped celery
-Add one cup of ranch dressing (or blue cheese) and a cup of Frank’s Hot Wing Sauce
-Mix it together, put in a casserole or baking dish. 
-Top with shredded cheddar and bake at 350 until hot and bubbly (usually 30 minutes)


-Eat with Tortilla chips or veggies (I prefer carrots and celery)

Crunchy Asian Salad 4 green onions (scallions)
1 pkg slivered almonds
1 pkg sunflower seeds
1 can rice noodles
1 bag or head lettuce (chop)

optional:
Mandarin oranges
Water chestnuts
dressing:
4 tbl brown sugar
1 tsp salt
6 tbl rice vinegar
1/2 cup oil

Whisk ingredients together and let sit until you are ready to toss on salad. Don’t refrigerate. The oil and vinegar will separate, do not shake, just remix before putting it on. *taste it… Sometimes it needs a touch more brown sugar.
Artichoke Dip Ingrediants:1 cup of maynaise 1 cup of grated parmesean1 15oz can of quartered artichikes 1 tsp of garlic powdersalt & pepper to taste
Combine all ingredients together and put into a baking dish. Bake for 30 minutes at 350 degrees. The top should be golden and bubbly.


Chili cheese dip aka “dog food” dip:
Ingredients:

  • 1 8oz brick of cream cheese
  • 1 can of Hormel Turkey Chili (fat free kind)
  • Shredded cheddar cheese


In a casserole dish, layer the ingredients starting with the cream cheese, then turkey chili and the cheddar cheese. Bake in a 350 degree oven until the cheese is melted a bubbly. Optional: broil for 2 minutes (make sure you keep an eye on it!) if you want the cheese to brown.

I started my day at Barre Bee Fit where Michelle worked me to the core, no pun intended. BBF recently got  new resistance bands which are a great added bonus to the workout. This morning, Michelle had us loop the resistance band around our thighs while in a plank.

Breakfast: Ginger snap larabar w/ my coffee
Last night’s dinner:Chicken Cacciatore boneless, skinless chicken breasts, peppers, onions, and seasoningsSo easy & so healthy!
Brittany’s Cesar Salad with her homemade, non creamy dressing… SO good!!!!
Brittany and I wanted to cook dinner together and since she is getting married in less than 6 months she wanted to stick with something on the lighter side. We worked together to come up with this Chicken Cacciatore recipe that is the perfect healthy comfort meal. 
L & B’s Bridal Chicken Cacciatore

  • 2 boneless skinless chicken breasts
  • 1 red pepper sliced
  • 1 yellow pepper sliced
  • 1 onion chopped
  • 1 can of organic fire roasted tomatoes
  • 1 tsp of salt
  • 1/2 tsp of pepper
  • 1/2 cup of low sodium chicken stock
  • 1 tsp of garlic powder
  • 1/2 tsp of dried oregano
  • Non stick cooking spray
  • 2 tbsp of olive oil

Spray a cast iron skillet with non-stick cooking spray and 1 tbsp of olive oil. Season chicken with salt and pepper. Brown chicken on medium to high heat for 5 minutes on each side or until golden brown on each side. Remove from pan and set aside. 
Add 1 tbsp of olive oil and add peppers and onions to skillet until tender. Add salt, pepper, tomatoes, chicken stock, garlic powder, and oregano. 

Place cooked veggies and chicken in a baking dish and bake at 400 degrees for 23 minutes. Check the half way through cooking, if the veggies look dry, add more chicken stock to make a “sauce like” consistency.


This meal was saucy, spicy, flavorful, and delicious. Pairs perfectly with some red wine :-)
