Peanut Butter & Banana Smoothie

Whats up Chicago?! Happy Tuesday, although this rainy weather is not making me very happy. 
I had dinner at East Bank Club last week and tried a taste of my friends peanut butter and banana smoothie. Although it was delicious, I was destined to make one of my own using low calorie ingredients.
I love smoothies but when I order them from a restaurant or smoothie shop, I don’t always know how much or what exactly is in it. I like to practice portion control and since peanut butter is high in calories I like to control how much is in my smoothie.
I love all natural creamy peanut butter…skippy just doesn’t do it for me anymore I used 1 tbsp and it was just enough to create that delicious peanut butter flavor
I buy non fat yogurt by the tubs so easy and delicious
Peanut Butter & Banana Smoothie Ingredients:1/2 ripe banana (frozen bananas work well for this)1 tbsp of natural peanut butter1/2 cup of non fat plain yogurt 1tsp of honey
Blend all ingredients together until the smoothie is to your desired consistency.
I personally like mine thick, frothy, and smooth.
I love youuuuuuu I slurped up every last drop
My favorite tool in the kitchen…the motor boat!  of course I made a huge mess, would you expect anything less?

It’s peanut butter jelly time!

Good morning and Happy Valentines Day! My high school friends and I got together last night for a lingerie exchange party… so fun! All you ladies should definitely get together and do this with your girlfriends!

It’s peanut butter jelly time!  My friend Stephanie and I love the peanut butter and jelly bars from Goddess and the Grocer so I decided to make my own!
Peanut Butter and Jelly Barsusing 3 ingredients
Ingredients:

  • 1 pouch of store bought peanut butter cookie mix (yes, I cheated)
  • 1 jar of strawberry jam
  • 2/3 cup chopped peanuts

Prepare cookie mix according to directions Spread 2/3 of the dough in a prepared cake pan
*make sure you spray the pan with non stick cooking spray
spread the jam evenly over the dough
TIP: mix the jam up before adding to the dough so it will spread evently
drop small globs of the remaining peanut butter dough over the jam don’t worry if the jam isn’t covered
Bake for 40 minutes at 375 degrees, sprinkling the chopped peanuts over the bars half way through cooking.  You can use any kind of jam you like, I prefer strawberry jam (not jelly) because I like the texture. make sure you let them cool completely before cutting into bars yummy, gooey, peanut butter and jelly happiness!

I personally think Valentines Day is the greatest excuse to eat all the chocolate I want.

Loving this Lazy Thursday!

Gosh I have been an absolute waste today… since it’s snowy, cold, and nasty out I had a lazy Thursday starting with some brunch at The West Egg Cafe with my neighbor Rico.

Lazy Thursday Kitchen Creation: Homemade hummus! Inspired by Jessica’s blog (again) I made her peanut butter hummus with a chili kick and some other Newtritionista edits. It sounds gross but after making it, the peanut butter gives the hummus a unique, non over-powering flavor.
Laur’s peanut butter and chili hummus

  • 1 15-oz can of organic chick peas
  • 1 BIG tbsp of peanut butter
  • 1 cup of light olive oil
  • 1/4 tsp of salt
  • 1/2 tsp of pepper
  • 1 tsp of chili powder
  • 1 tbsp of finely chopped garlic

Add chickpeas to food processor until finely ground. Add peanut butter, garlic, spices and mix again. Stream in olive oil through the top while the food processor is on. Once the hummus is at your desired consistency serve with fresh veggies or whole wheat pita and enjoy!How do you spend your lazy days?
