Homemade Spicy Kale Chips

When it comes to sweet vs salty, I am definitely a sweet person. Chocolate is my biggest weakness. Lately, when I’m craving a salty snack I always want to grab a bag of chips which is the not best choice for a salty treat except for pop chips of course!
There has been so much hype about kale and how good it is for you. Last week, I ventured to Trader Joe’s and found pre washed chopped kale, which is one of their newest items! I used the pre chopped kale to make kale chips…which turned out delicious! I prepared the kale with some olive oil and seasonings and tossed it together with my best kitchen tool, my hands! …and baked them in a 400 degree oven for 15-17 minutes this photo doesn’t even do them justice My kale chips turned out awesome. They were crispy, crunchy, and had a hint of spice.
I ate the entire tray in one sitting. No joke.
Homemade Spicy Kale Chips
Ingredients:1 bag of pre washed kale1 tbsp of light olive oil1 tsp of salt1 tsp of pepper1 tsp of cayenne pepper1 pinch of red pepper flakes
Directions:Coat the kale with 1 tbsp of olive oil and mix well. TIP: 1 tbsp doesn’t seem like enough but if you add too much olive oil the chips will become soggy. Add the salt, pepper, cayenne pepper, and red pepper flakes to the kale and olive oil and mix well with your hands so all the kale is evenly coated. Spread the kale on a baking sheet lined with foil. Make sure the kale is spread evenly. 
Bake for 15-17 minutes at 400 degrees until the kale is browned and crisp. If you want you chips super crispy, flip them over in the middle of baking (after 7 minutes or so)
These chips are extremely easy to make, full of flavor, and very filling. You are also getting in your vegetable servings while enjoying something that is nutritionally good for you!

Enjoy your vacay without getting fat

Happy St. Patrick’s Day! I am currently blogging from 10,000 feet in the air on my way to Florida with my family. 
Wi-fi on the plane is ah-mazing!  3 thumbs up
Since I’m going to be in a bikini and mini dresses most of the time, I made a master plan on how to enjoy vacation without coming home and feeling like a fat tub of lard. Most of the time we think vacation equals “I can pig out.”

Sure, you can pig out but you also need to be mindful of the choices you make, it’s easier than you think!

The day of…
Airport food sucks. If you want to eat healthy try sticking with something simple like a turkey sandwich or salad. When it comes to airport or airplane food, the simpler the better. Don’t even think about getting in the line at McDonalds…vacay hasn’t started yet.

FYI skip the “healthy” airport kiosks Most of the time you are not getting fresh, quality foods and paying a hefty price for it. gross veggie sandwich from an airport kiosk that I threw in the garbage
Always have snacks on hand. Bring granola bars, almonds, dried fruit, or pop chips.
Side note: Jan had to bake homemade hamentashen and bring it with us to Florida. Thanks Mom, just what I need when I’m getting in a bikini.

While you’re on Vacay:

Pace yourself. How do you pass up nutella and banana crepes in Paris? YOU DON’T. Just pace yourself and try not to get out of control.

Hide the mini bar key.  Do you really want to splurge on over priced chips and m&m’s? Save your calories for something that’s worth it!

Walk. On the beach, while shopping, opt for the walking tour, etc. Not only will you be able to see more of the city your traveling in, you will burn calories. Duh

Eat Regularly. We all love sleeping in while on vacation and running around seeing sites. Don’t skip meals, you will find yourself STARVING later on and pigging out on something you will regret.

Did you know that most of the time you think you are hungry, you’re actually just bored?  think before you munch
Tips to avoid late night munchies…

  • Eat a balanced, satisfying dinner.
  • Brush your teeth and use a strong minty mouthwash.
  • Online shop- I highly recommend checking out Victoria’s Secret’s 2011 summer swim line. You’re not going to munch when you see the hot VS models.
  • Start using crest white strips– the kind where you need to leave them in for at least an hour.
  • Paint your nails two coats. You won’t be able to stick your hands into a bag of chips with wet nails.
  • Clean- you will burn calories too!
  • Drink water, crystal light lemonade, or decaf green tea.
  • Get into your bed and don’t leave!
  • Start a secret stash.

Most importantly it’s all about will power the chips are not forcing you to eat them
Why you should stop munching at the wee hours of the night…

  • You will feel better about yourself
  • You may lose weight
  • You will wake up feeling ah-mazing!
  • You will realize YOU CAN DO IT!
