My new favorite lunch combo

Happy happy friday! How awesome is the Chicago weather today!?

I’ve been enjoying my power protein smoothie almost every morning this week. I substituted banana instead of the frozen acai. Fantastic!

I want to share my new favorite lunch combo I’ve been bringing to work. I have always felt that bringing your lunch to work not only saves you money but calroies as well. I’ve been having a hard time finding good lunch options because I’ve become such a picky eater lately. I refuse to eat chicken especially from a restaurant and most recently I no longer have a desire to eat turkey- even boar’s head. I’ve really tried to incorporate more poultry in my diet but I just can’t do it.

Last week I put on my thinking hat and created a vegetarian healthy meal for weekday lunches.

Stir fry vegetables over quinoa

I know this sounds so simple, and it is! My question is why didn’t I think of this before?! I absolutely love stir fry and can eat it for any meal. It’s easy to prepare as well.

I like to purchase stir fry veggies in bulk at either trader joe’s or whole foods in the produce section. I love that the veggies are already cut up for me so I can throw them in my wok.

Stir fry sauce: 1-2 tbsp of lipton onion soup with 1 cup of low sodium soy sauce. I let the onion soup dissolve in the soy sauce before adding it to the stir fry.

I cook the veggies on medium to high heat in 1 tbsp of coconut oil.

While the veggies are cooking, I prepare the quinoa according to the directions on the package.

Once everything is finished cooking, I mix it all together and either enjoy or divide the stir fry into tupperware containers.

This stir fry lunch keeps me full and satisfied so I can be on my A game the rest of the day.

Flavorful Steak Stir Fry

Good morning! I am injured and I’m not happy about it. I was working out at Barre Bee Fit yesterday and I think I pulled a muscle in my leg. The pain is shooting all the way down my entire leg. :( I will now be walking with a limp for a wedding I am attending this evening and for NYE.

On a positive note I whipped up some flavorful steak stir fry last night for texas boy and I. As part of his holiday gift I surprised him and took him to the batting cages at Sluggers. It actually wasn’t a surprise because he figured it out very quickly especially after I told him to wear sneakers.

There he is!

I went in the slow batting cages and I actually hit the ball! We had so much fun. The best part was that it cost only $5 per person for unlimited batting until midnight. I highly recommend it.

Now onto the stir fry!

Flavorful Steak Stir Fry

ingredients:

  • 1 package of top sirloin beef tips (cut into 1 inch pieces for stir fry)
  • 1/2 package of lipton onion soup
  • 1 cup of low sodium soy sauce
  • 1 tsp of minced garlic
  • 1 lb fresh stir fry vegetables (any kind you like)
  • 1 tsp of salt
  • 1 tsp of pepper
  • 1 tsp of red pepper flakes
  • 1 tbsp of corn starch
  • 1 tbsp olive oil
  • 1 package of brown rice (optional)

Directions:

Take the steak, onion soup, soy sauce, and garlic and put it in a zip lock bag. Make sure all ingredients are mixed well and covering the meat. Let the steak marinate in the fridge for at least 1 hour. I let it marinate for four hours, the longer you let it marinate the more flavorful the steak will be.

Heat up a large wok (you can use a skillet if you don’t have a wok) with olive oil and add the vegetables and cook until tender. Add salt and pepper to season.

Add the steak using tongs or a fork to pull out each individual piece. It’s important to not pour all of the sauce into the stir fry JUST add the steak. This marinade is very flavorful and if you add too much it will ruin the dish. Make sure you save the marinade to add later on if the stir fry needs more sauce.

Once the beef is browned add the corn starch to let the sauce thicken. Add the red pepper flakes to give the dish a bit of heat.

Serve over brown rice or if you’re gluten free serve over quinoa.

This dish turned out awesome. We scarfed this up in a matter of minutes and unfortunately there were no left overs. Which means I am making this again VERY soon!
